Tech Startup Aims to "Catapult" Vegan Meat Production

Seattle Food Tech—a new brand making plant-based chicken nuggets—focuses on the production scalability of vegan meat with the aim of outpacing animal products.

New vegan startup Seattle Food Tech (SFT) recently announced plans to boost the capability of vegan meat companies to scale production to outpace that of animal agriculture. In a recent interview with media outlet Foodnavigator, SFT CEO Christine Lagally—the former senior scientist at food advocacy firm Good Food Institute—explained the startup’s plan to “catapult” the production of plant-based foods to reach price parity with animal products. “We’ve been commercially manufacturing plant-based meat replacements for more than a hundred years, but the industry as a whole still lacks scale and efficiency,” Lagally said. “The meat industry has really innovated around production technology, but plant-based brands have focused more on making their products palatable and functional, and some of them have done a really great job in recent years. We want to design the machinery and associated facilities to produce these products at scale.” SFT raised $1 million in funding in April and is developing its own plant-based meats such as chicken nuggets with the aim of distributing its products to schools and hospitals by the end of 2018.
