
Vegas Resort Revamps Menus with Vegan Options
Station Casino properties in Nevada added vegan menu options, including a steakhouse at Red Rock Resort that now serves beet ravioli, heart of palm croquettes, and spiced pear sorbet.
Two Nevada-based properties owned by entertainment company Station Casinos, Red Rock Resort in Las Vegas and Green Valley Ranch in Henderson, recently expanded their vegan menu options across several restaurants. “We are always looking to exceed our guests’ expectations, and with the growing popularity by many who prefer vegan and vegetarian options,” Station Casinos spokesperson Lori Nelson told local media outlet Vegans, Baby, “we saw an opportunity to expand our menus throughout several of our restaurants.” Red Rock Resort’s T-Bone Chophouse now serves several new vegan dishes including roasted beet ravioli, pan-seared hearts of palm croquettes, and spiced pear sorbet, while its casual concept The Grand Cafe added the Impossible Burger patty to its menu and is serving it in a burger format and in a meatless pasta bolognese. At Green Valley Ranch, diners can now order Mushroom Rockefeller, Roasted Cauliflower Piccata, and a trio of sorbets at steakhouse, Hank’s Fine Steaks & Martinis, along with vegan-upon-request items at the property’s other restaurants, Bottiglia Enoteca and Borracha Mexican Cantina. The vegan scene in Las Vegas is rapidly growing, with several new restaurants scheduled to open in coming months, including Asian-fusion eatery Chef Kenny’s Vegan Asian Restaurant, burger bar Blinders, Burgers & Brunch, and Southern-inspired restaurant Amber’s Smoked Vegan.
