Gigantic Vegan Mexican Restaurant to Open in Toronto

Rosalinda—a massive 136-seater vegan restaurant—will join the growing vegan food scene in Toronto this spring.

Vegan restaurant Rosalinda will open this spring in Toronto, Canada. The 136-seat eatery will feature a menu of Mexican-inspired dishes such as Tijuana-style broccoli, jackfruit pibil, and spicy carrots in mole. Founders Max Rimaldi and Jamie Cook first developed the concept for Rosalinda in 2004, and partnered with area restaurateur Grant van Gameren to help open the business. “The Toronto dining scene has evolved so much since we first started talking about this concept," Cook said. "We're excited to be opening Rosalinda at a time when people are more open than ever to incorporating meatless dining into their lives. We're creating a restaurant that will be as appealing to a diehard meat-eater as [well as] a lifelong vegan.” Toronto is home to upscale vegan restaurant Planta—and its fast-casual spinoff Planta Burger—which will open its second location, complete with a plant-based sushi bar, in Miami early this year.
