"On a Bus" Vegan Eatery Debuts on a Bus in Milwaukee

The newest vegan restaurant to open in the Midwest will be housed in a 1971 Volkswagen bus.

On the Bus—a new vegan eatery—will be rolling into food hall Milwaukee Public Market (MPM) this summer. Owner Emily Ware decided to use the Volkswagen bus (which will serve as the counter for the restaurant) as a nostalgic nod to the first vehicle she owned. On the Bus will serve veggie burgers, sandwiches, acai bowls, kale chips, vegan ice cream, and homemade almond milk. “We’re here to show Milwaukee that plant-based foods can be prepared in such a way that you’d never think for a second that anything is missing,” Ware said. “It’s my belief vegan food can be just as delicious, if not better, than their non-plant-based counterparts.” MPM spokesman Paul Schwartz said that Ware—who is also a partner in non-vegan market stall The Green Kitchen—is on-trend with her new concept. “[She] has a strong sense of the market customer base and realizes there’s an opportunity to expand that base by filling a void in the market’s offering,” Schwartz said. “Her concepts about food and retail design are incredibly exciting and we can’t wait to see what she brings to the table.” The newest addition to the growing plant-based scene in the Midwest is fast-casual vegan restaurant J. Selby—which opened its doors this week in St. Paul, MN.
