Raw Green Lunch Wrap {Recipe}

Back to school doesn’t have to mean back to poor health.

For many parents, back-to-school season means one thing: making lunches for your children every day (or night). With this in mind, we’re presenting a raw green lunch wrap created by Sepsenahki Aahkhu (aka, Chef Ahki) that’s as easy to make as it is nutritious and delicious. Our advice? Make one for yourself to avoid that post-lunch crash at the office.

Serves 2

What You Need:
4 grape leaves
1 teaspoon sea salt
6 tablespoons freshly squeezed lemon juice, divided
3 teaspoons hemp seed oil
½ cup minced walnuts
1½ cups cooked wild rice
¼ cup currants
¼ cup sun-dried tomatoes
1 medium red onion
1 teaspoon chopped dill
1 teaspoon chopped basil
1 teaspoon chives
½ teaspoon cayenne

What You Do:
1. Into a medium dish, marinate grape leaves in sea salt, lemon juice, and oil for at least four hours (overnight is preferred).

2. Remove veins halfway through the leaves. In a bowl, toss remaining ingredients and stuff inside grape leaves. Serve with a salad or hummus.
