World-Famous Culinary School Adds First Vegan Course

West London's Leiths School of Food and Wine now teaches prospective students to make beet bourguignon, vegan cheese sauce, egg-free mayonnaise, and more.

Top culinary school Leiths School of Food and Wine in West London, England added its first vegan cooking course to the curriculum this fall. The school’s managing director Camilla Schneideman said that the addition of the course is in response to a growing interest in vegan culinary techniques and nutrition. “It sold out extremely quickly, which seems to reflect the appeal of being taught how to cook delicious, innovative vegan food,” Schneideman told media outlet Metro UK. “The response we’ve had to the release of the class is exciting; it shows that the perception of veganism is changing on a large scale.” The initial “The Essential Vegan” course will teach prospective chefs to make dishes such as egg-free mayonnaise, beet bourguignon, vegan risotto, chickpea curry, and chocolate mousse. Due to the popularity of the fall course, the school will also launch a similar course in April 2018 with night classes also planned that will focus on helping chefs prepare vegan dinner parties, cakes, and baked goods. Stateside, Florida’s McFatter Technical School launched its first plant-based culinary course in August to teach students how to make restaurant-worthy dishes to prepare them for employment within the growing plant-based sector.
