Singer-songwriter Laura Pergolizzi (known professionally as “LP”) sent a message to Starbucks yesterday as part of animal-rights organization Compassion Over Killing (COK)’s campaign to petition the multinational coffee chain to add vegan options to its menus. “Hey Starbucks,” Pergolizzi said, “let’s give more people access to healthier food. I know there are a lot of existing customers, and customers-to-be, who are jonesing for more vegan options on the menu, and I’m one of them.” COK first launched its campaign with vegan journalist Jane Velez-Mitchell last year and has since gained 30,000 signatures on its petition. Starbucks CEO Kevin Johnson recently stated that the company is planning to develop more plant-based beverage and food options. Starbucks launched its first vegan-certified meal—the Vegan Lentils & Vegetables Protein Bowl with Brown Rice—in 2017 and partnered with Florida vegan bakery Bunnie Cakes to add one vegan dessert option, a passionfruit cupcake, to select locations in south Florida. COK’s previous campaigns have prompted chains such as Dunkin’ Donuts, Subway, Pita Pit, and Tim Hortons to add vegan options to their menus.
