Vegan Burger Bar Pops Up for Earth Day

Vegan burger pop-up Earthie’s Drive Thru will open April 22 (Earth Day) in San Francisco. Co-founders Lacie Smith and Kyle Underseth created the event to introduce people to the “burger of the future.” “For the pop-up, we’re cooking up a 100-percent plant-based burger that uses the Impossible [Burger] for the patty,” Smith told VegNews. “The best part is the burger is dressed in our homemade sauce—a creamy, savory, smoky sauce that brings the whole burger together.” In addition to vegan burgers, the pop-up will serve homemade sodas and kombuchas and hand-cut fries that are crispy on the outside but with a mashed-potato consistency on the inside. Earthie’s will also plant one tree for each burger it sells. Smith and Underseth intentionally planned the pop-up for Earth Day to help customers make the connection between dietary choices and environmental issues. “We think food should be easy on the planet and humane in every way,” Underseth said. “We want to encourage people to have an Earth Day-mindset everyday, and making great plant-based comfort food is our way of doing that.”
