Fruit & Baby Greens Salad

The mix of berries, nuts and greens brings an earthy grounding to the sweet flavors of the fruits. Place the star fruit, also known as carambola, artistically on top.

Serves 4

What You Need:

  • 10 ounces mixed baby greens
  • 1 mango, diced
  • 2 tablespoons dried goji berries
  • 3 tablespoons pecans
  • 3 tablespoons walnuts
  • 2 tablespoons macadamia nuts
  • 1 star fruit, sliced (outer skin cut away)

What You Do:

  1. In a large bowl, toss all ingredients except star fruit. Dress with Eleven Island Dressing (see recipe) and gently toss again.
  2. Arrange salads on individual plates and garnish with a slice of star fruit.
