Cashew & Pepper Dip

Way more fun than hummus, this addictive dip is the perfect pop of color on any plate.

If New Year’s resolutions have you munching your way through acres of celery and carrots sticks, add just a little fun to your crudité repertoire with this savory, sensational dip. Red bell peppers give the perfect flavor, and cashews add richness and a bit of protein. Beware: you may never eat an un-dipped vegetable again.

Serves 6

What You Need:

  • 2 cups cashew pieces
  • 1 roasted red pepper (or three large pieces from a jar)
  • 1/2 cup water
  • 1/4 teaspoon sesame oil (optional)
  • Salt and pepper to taste

What You Do:

  1. Place all ingredients in a food processor and process until smooth, scraping down the sides of the bowl frequently. 
  2. Process for 3 minutes to make the dip completely smooth.
