Marinated Tomatoes

Let diners spoon over servings of pasta with pesto. If tomatoes are not in season or fresh ones are not available, you can dice frozen, thawed tomatoes or even use good quality canned diced tomatoes. Reserve any excess juice for another use.

What You Need:

  • 4 or 5 ripe tomatoes
  • 1 or 2 cloves garlic, to taste
  • 1 tablespoon extra virgin olive oil
  • 2 or 3 tablespoon balsamic vinegar
  • 1/3 teaspoon salt

What You Do:

  1. Dice tomatoes and mix with other ingredients a few minutes before dinner.
