Mixed Greens with Beets & Walnuts

Get your daily dose of greens with this savory combination, using just the right amount of marinade. Walnuts impart the perfect crunch while beets add color and beneficial nutrition.

Serves 6 to 8

What You Need:

  • 10 to 12 ounces mixed baby greens (mesclun)
  • 2 12-ounce jars pickled beets, drained 
  • 1/2 cup finely chopped walnuts 
  • 2 tablespoons olive oil 
  • 2 tablespoons lemon juice or balsamic vinegar
  • Salt & pepper to taste

What You Do:

  1. Combine the ingredients in a serving bowl, toss well, and serve.
