We were beyond excited when Chloe Coscarelli, the first vegan baker to win Food Network’s Cupcake Wars, told us she was writing a dessert tome as a follow-up to her debut cookbook Chloe’s Kitchen. Coscarelli’s award-winning recipes are not only delicious, but super easy to whip up—even for the novice vegan baker. And since she’s such a sweets savant, we put Coscarelli up to the challenge to create a recipe based on a VegNews reader’s dream vegan dessert with a KitchenAid mixer on the line (the contest is open until March 1). Though any one of these exclusive recipes from Coscarelli’s latest cookbook are straight out of a pastry fantasyland—Tiramisu Pancakes, Mojito Chocolate Chip Cookies, and Hot-Fudge-on-the-Bottom Cake—we’re excited to share these deceptively simple recipes with VegNews readers.
