Vegan Strawberry Streusel Cake

Ring in spring with this light and sweet strawberry cake with a cinnamon-sugar topping.

Makes one cake

What You Need: 

For the topping:
1/3 cup flour
1/3 cup sugar
1/4 teaspoon cinnamon
4 teaspoons vegan butter

For the cake: 
2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons water 
1 tablespoon egg replacer 
2 tablespoons vegan butter
1/2 cup unsweetened applesauce 
1/2 cup soy milk
1-1/2 teaspoons vanilla 
Safflower oil, for oiling pan
1 pint strawberries, washed, destemmed, and sliced

What You Do: 

  1. For the topping, in a small bowl, place flour, sugar, and cinnamon. Stir well to combine. Using a pastry blender or your fingers, work in vegan butter to form a mixture that resembles fine crumbs, and set aside.
  2. Preheat oven to 350 degrees. For the cake, in a large bowl, place flour, sugar, baking powder, cinnamon, and salt, stir well to combine, and set aside. In another small bowl, place water and egg replacer. Whisk vigorously for 1 minute or until very frothy. Add vegan butter and whisk well to combine. Add applesauce, soymilk, and vanilla, and stir well to combine. Add wet ingredients to dry ingredients and stir well to form a thick batter.
  3. Lightly oil 8 x 10-inch pan and add cake batter. Evenly distribute sliced strawberries over batter, and then sprinkle reserved streusel mixture over top.
  4. Bake cake for 45 to 50 minutes or until an inserted toothpick comes out clean. Let cool slightly before serving.
