Homemade Vegan Pot Stickers

Homemade pot stickers? Even for beginner chefs, these super-easy dumplings are darling.

Does whipping up a batch of homemade pot stickers sound intimidating? Mm-hmm. Are these delicious dumplings as easy as 1-2-3? Yep. Should you make them right this minute, and reap the tasty rewards? Yes!

Makes 24 pot stickers
What You Need:
  • 1 tablespoon non-hydrogenated margarine
  • 1 block firm tofu, drained and cubed
  • 1/2 cup edamame beans, shelled
  • 1/4 cup shredded carrot
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/4 cup cilantro, chopped
  • 1 package dumpling wrappers (round)
  • 1/2 cup water
  • 1/4 cup vegetable oil
What You Do:
  1. In a skillet over medium-high heat, heat margarine. Add tofu, edamame, carrot, salt, and pepper. Cook for about 5 minutes, stirring occasionally. Add hoisin sauce and sesame oil, and cook for 5 minutes, stirring. Turn off heat and mix in cilantro.
  2. On a cutting board, lay out dumpling wrappers a few at a time to prevent drying out. Put a heaping teaspoon of filling in the center of each dumpling. Run a wet finger around the filling to moisten the dumpling wrapper. Fold wrapper in half to create a half-moon, and squeeze edges together.
  3. In a skillet over medium-high heat, heat oil. Fry pot stickers about 3 minutes on each side.
