‘New York Times’ Writer Mark Bittman Cooks Vegan on ‘Today’ Show

The food columnist talks about his new book VB6 and whips up easy plant-based dishes.

The New York Times’ writer and author of VB6 Mark Bittman recently appeared on the Today show, demonstrating for host Matt Lauer how to prepare simple and healthy vegan food such as Creamed Mushrooms on Toast, Breakfast Pilaf with raisins and apples, and crunchy Spiked Guacamole with whole grain chips. When Lauer asks Bittman why everyone should abstain from eating meat before 6pm, he says it’s ultimately about health. “The science is: to be healthy we need a more plant-based diet,” states Bittman. And eating “vegan before 6[pm] is a strategy to do that.” The writer lays out six principles in his mostly vegan health plan such as minimizing consumption of animal products and cooking as many meals at home as possible.
