A study funded by the Danish Dairy Research Foundation published in the American Journal of Clinical Nutrition shows that ingesting even moderate amounts of butter raises LDL cholesterol. Ironically, the original goal of the study was to debunk the unhealthy reputation of butter, but the research ended up only confirming current medical opinion. LDL cholesterol is harmful in that it contributes to the build-up of plaque along artery walls, which creates a greater risk of heart attack and stroke. Vegan foods do not contain any cholesterol, and according to Physicians Committee for Responsible Medicine, “for every one percent you reduce your cholesterol level, you reduce your risk of heart disease by two percent.” The butter study concluded with a recommendation that “people should keep their consumption of butter to a minimum.” Money well spent, butter industry.
