San Diego residents will soon have another vegan option at their disposal with the opening of Plant Power Fast Food, a new plant-based concept aimed to give eaters a healthier option when it comes to quick, filling food. Set for an grand opening later this month, Plant Power Fast Food will serve hearty burgers, carne asada-French fry-stuffed burritos, fish tacos, kale chicken Caesar salads, an assortment of smoothies, and housemade almond milk milkshakes. CEO Mitch Wallis is also the founder of Evolution Fast Food, San Diego’s first vegan fast-food restaurant that opened in 2009. Prior even to the opening of Plant Power, plans are already set for a second in nearby Encinitas for later in 2016, with aspirations for an eventual nationwide expansion. It’s just the latest in a recent boom of vegan fast food establishments cropping up, following VeganBurg in San Francisco, Amy’s Drive Thru in Rhonert Park, CA, and by CHLOE in New York City.
