Cinnamon Raisin Coconut Swirl Bread

Coconut and cinnamon combine for a swirly delight.

Serves 4-6

What you need:

whole wheat dough, prepared
4 tablespoons ground cinnamon
2 cups shredded coconut
1-½ cups raisins
2 tablespoons brown sugar
 

What you do:

1. Roll out dough on a cutting board until it is flat and forms a large rectangular shape. Carefully transfer dough onto a lightly oiled baking sheet.

2. Spread vegetable oil over the top of the dough, ensuring that the entire surface is moist. Top dough with half of the cinnamon, then half of the coconut, and all of the raisins. Add another layer of the remaining coconut, then sprinkle with the remaining cinnamon.

3. Carefully roll one short end toward the other (right to left), creating a spiral effect. Be careful not to let the fillings fall out as you roll the bread. Seal the ends, sides, and any other open spaces so the fillings are insulated and nothing is exposed. Sprinkle brown sugar over the top of the bread roll.

4. Bake at 200°C for 45 minutes. Remove from oven and let sit for 10 minutes.
