Chocolate Coconut Brownies

Topping chocolate brownies with shredded coconut is vegan bliss.

Serves 4-6

What you need:

2 cups flour
1 teaspoon salt
1 teaspoon baking powder
⅔ cup cocoa powder
1 cup brown sugar
1 teaspoon vanilla extract
½ cup cooking oil
1 cup non-dairy milk
2 cups shredded coconut
 

What you do:

1. In a large mixing bowl, whisk flour, salt, baking powder, cocoa powder, sugar, vanilla extract, and oil. Add non-dairy milk and 1½ cups shredded coconut. Mix well.

2. Into a small baking pan, spread mixture evenly into a small baking pan and top with remaining coconut.

3. Bake at 350° for 20 minutes.
