Green Lion will open as Sydney, Australia’s first all-vegan pub on September 17, and will operate adjacent to Red Lion—a bar that is part of the Red Lion Hotel, established in 1828. The new vegan spot will feature veganized versions of classic comfort dishes such as bangers and mash, nachos, and hand pies, along with wine and beer that are free of animal products. “We are opening the Green Lion with the belief that great and tasty comfort food can be made without animal products, and will be creating plant-based food that will appeal to everyone,” Green Lion co-founder Bhavani Baumann said. “We believe in supporting people who are making conscious choices with their food, want to challenge the idea of what a beer and burger can be.” As the local population continues to make more compassionate choices, Sydney has seen a surge of vegan offerings including dessert shop Zeitgeist Mylk Bar and sister cafe Coffee Bondi Beach, vegan fish-and-chips eatery Bliss and Chips, and high-end pizza shop Gigi’s Pizzeria. Furthermore, this year a vegan Thai vegetable curry hand pie beat out 1,700 animal-based competitors to win Australia’s Best Pie competition.
