Jazzy Vegetarian Laura Theodore shares her best holiday recipes with the public network.

In a recent web feature, classic network PBS turned to the expertise of long-time vegan and author of The Jazzy Vegetarian book series Laura Theodore for the 2016 holiday season. Theodore—who also hosts the PBS cooking show of the same name—shared six veganized recipes inspired by her mother’s and grandmother’s traditional holiday repertoire. “I still crave these traditional dishes,” Theodore said, “so creating vegan versions of these beloved classics has become a pleasure.” Recipes include a Cashew and Quinoa loaf that Theodore serves as a centerpiece, an array of sides including Asparagus with Vegan Hollandaise (made with tofu), Paprika and Rosemary Red Potatoes, Creamy Broccoli Soup, and Fig, Kale and Tomato Salad, along with buttery Holiday Sandies Cookies for dessert. In 2016, many non-vegan media outlets—including Forbes, Fortune, Bustle, and New York Times, amongst others—have produced features centered around vegan topics.
