Raspberry-Vanilla Chia Jam

This nutrient-packed chia jam will give your morning toast an energy boost.

This bright and springy Raspberry-Vanilla Chia Jam recipe, from Melissa King's Easy. Whole. Vegan.:100 Flavor-Packed, No-Stress Recipes for Busy Families, is not only delicious, but simple and quick to whip up. Healthy ingredients like fresh raspberries and protein-rich chia seeds transform a usually sugar-laden fruit product, into a nutritious spread that will keep your energy levels up all morning long.

Makes 2 cups

What You Need:

3 cups fresh raspberries (or frozen and thawed)
3 to 4 tablespoons chia seeds
2 tablespoons maple syrup
1 teaspoon ground vanilla beans

What You Do:

1. Blend the raspberries in a food processor. Add the remaining ingredients and blend for another minute.

2. Transfer the mixture to a 16-ounce Mason jar and place it in the fridge. It should take about 30 minutes to set up. This should keep in the fridge for several weeks. You can also freeze it for up to 6 months.
