World-Class Steakhouse Adds Vegan Menu

Washington state’s Daniel’s Broiler introduces a plant-based menu—complete with almond-based ricotta—to keep up with the times.

Washington state-based classic steakhouse Daniel’s Broiler Prime Steaks & Chops debuted its first all-vegan menu last week at all three of its locations. The menu consists of a multitude of main dishes, including Kimchi Fried Grains & Rice, Penne Bolognese (made with soy protein), and Cheese Ravioli (stuffed with almond-based ricotta). “We felt there was a market we could capture [where a] vegetarian or a vegan consumer knows they have a place to go where their friends or family may want a steak,” DB’s Corporate Chef Peter Coulter told local news station King 5. As for the new dishes, Coulter touts that many are indistinguishable from animal-based recipes when it comes to taste. “If I didn’t tell you, you wouldn’t know [the bolognese] was vegan,” Coulter said. “I think that’s my goal, because I’m a meat eater.” The vegan menu at Daniel’s is available by request, and one dish—the Power Protein Salad served with a “honey mustard” dressing made with agave—has been transferred to the regular menu due to positive customer response. In Los Angeles, CA, fellow meat-centric eatery BOA Steakhouse added a vegan menu in June, complete with elevated dishes that include the Beyond Burger.
