Loews Minneapolis Hotel—part of the nationwide Loews luxury hotel chain—announced this week the addition of vegan meats made by local shop The Herbivorous Butcher to the menus of its on-site eateries. The move is part of the chain’s initiative “Flavor by Loews Hotels” that aims to bring products from popular local artisans directly to hotel guests. Starting next month, The Herbivorous Butcher’s vegan meats will be available on the breakfast and dinner menus at hotel café Cosmos and offered as part of a vegan charcuterie board at hotel bar Apothecary Bar & Lounge. Loews will also feature the vegan products on its banquet menus. Founded by brother-and-sister team Kale and Aubry Walch, The Herbivorous Butcher opened in 2015 as the country’s first vegan butcher shop and has since expanded its distribution to a number of restaurants and eateries, including meat-centric pub Bourbon Butcher, Pennsylvania-based Sand Castle Winery’s upscale restaurant TASTE, and Target Field—home stadium of Major League Baseball team the Minnesota Twins.
