No Thanksgiving is complete without that awful cranberry-sauce-in-a-can....but you have to pop it out whole so that it makes a good "thwock" sound and retains the ridges. No one actually eats it, but it's so much fun to play with :).

A few years ago, my Mom asked me to make a green bean casserole for Thanksgiving. I made the soup base from scratch, and I was especially thrilled when my father said it was the best he'd ever tasted - and when I told him it was vegan, he was really impressed. I love those moments where you can show that vegan food not just as good as the omnivore version, but even better. I am still asked to make the green bean casserole every year.

I have to have my mom's homemade 'overnight buns'. They are soooo wonderful warm out of the over, fluffy, but not mushy, spread with pumpkin butter, or blackberry jam, or stuffed with seitan and cranberries, or just plain. I finally learned to make them myself and veganized them. They are a lot of work, but so worth!

Sounds odd, but stuffed dates are a must. It's a recipe handed down from my mom's side of the family - dates filled with nut butter (pb, almond, etc., then rolled in powdered sugar.

Broccoli Cheeze Casserole!! I've been making it for years (used to be NON Vegan) - My entire family will riot if I don't make it for every holiday - especially Thanksgiving. I never measure so here's what you'll need - play with it... and I'm sure you'll be a hit! People that hate broccoli love this dish! My favorite cannot be chosen b/c I love stuffing and mashed potatoes soooo much. This would be a great victory for me b/c I'm in Japan now and don't have the stuff available to make myself a good thanksgiving dinner... plus this is my 1st thanksgiving as a vegan/vegetarian!

I positively cannot have Thanksgiving without the Veggi version of my Mother's special Matzo stuffing. the combination is better than a traditional bread stuffing and has all sorts of yummy ingredients, Nuts, craisons, sauteed onions and garlic, and mushrooms the usual herbs and spices and water chestnuts. It's rich, filling and oh soooooo good!

One dish I can't live without (there really are several!) is what our family lovingly refers to as "Crapple." This is a cranberry-apple crisp kind of thing - a can of cranberry sauce, some chopped apples, and an oatmeal-brown sugar topping drizzled with melted Earth Balance - How can you not love it!?! My grandma's cornbread stuffing is also the bomb, and I look forward to it all year!

Every year I make Cranberry Orange relish, and it is fantastic! For me, it's not Thanksgiving without it. It has fresh cranberries, vegan sugar, freshly squeezed orange juice, orange rind, orange liqueur (this makes all the difference), ground cloves and ginger, allspice, and toasted chopped walnuts - I start to salivate jut remembering all that goes into it, and picturing how fun it is to prepare, watching it thicken as it heats, the cranberries popping... I can't wait to make this year's batch!

It just isn't Thanksgiving without buttercup squash picked from my garden and filled with vegan stuffing made with bread cubes, celery, onion, pumpkin seeds and vegan "chicken" broth. Delicious. I usually make it more of a casserole and people can't get enough ... even some people who "hate squash" love this dish! I put lots of Earth Balance on top while baking to make it all buttery. YUMMMMMMM ... now I can't wait for Thanksgiving dinner.

The vegan stuffing my non-vegan mother developed for me, based on an old family recipe for stuffing. It's a bread stuffing w/mushrooms, onions, raisons, cranberries, walnuts, celery etc. It's really amazing, by far the best I've ever had and I've had many over the years. It is delicious, but what I love most about it is how much thought and love my mom put into developing it for me.

I just love a good vegan stuffing and it would be a sad sad holiday indeed without all of the savory goodness next to my Tofurkey roast. I like mine to be very simple; just celery, onion, mushrooms and garlic mixed with vegetable broth mixed with bread cubes (sometimes cornbread!)and baked till kind of crispy... I want some now in fact - even if it is almost 10 pm on the east coast.

One year I discovered how to make roasted root vegetables with parsnips and other unorthodox veggies. Its now one of my favorites and different side to have. Another is stuffed peppers which may not seem Thanksgiving like, but are delicious. I usually have to go to family events ladden with everything meat, so I take my own dinner and everyone is perplexed by the cornocopia of veggies they have never seen!

My favorite side dish is a cranberry salsa. The recipe is: 2 cans whole cranberry sauce 4 green onions 2 jalapenos 6 serrano peppers 1 small white onion juice of 2 limes combine and serve over vegan cream cheese with crackers!

Brussels Sprouts are traditional in my family; even with the non-vegan branch. Until my Mom passed away 2 years ago, it was a tradition to pick the sprouts off from the spikes on Thanksgiving morning to have with dinner. Now that Mother is gone, we just blanch them and freeze them to cook on Thanksgiving. sjb

Normally, I would have said my sweet-potato casserole and a savory slice of Tofurkey! But I recently (for Halloween) made individual cinnamon apple pies - adapting a recipie from VegWeb - and they are DELICIOUS!!!! The sugar caramelizes and forms a fantastic crunch with the apples and pie crust! I probably *can* live without it, but why would I want to? ;-)

I go NUTS for my mum's homemade stuffing that she's been making for as long as I can remember, even before I was vegan. She starts it off with coincidentally-vegan store-bought stuffing mix and adds chopped apples, cranberry, and other vegan loveliness. (To keep the secret safe, I just so happen to never see her making it.) I'd have it every day if I could, but I guess that would make it less special :)

I substituted sunflower seeds for walnuts in the stuffing one year (with celery and green onions) and I have to make it every year. My daughter won't even attempt it! Dumplings simmered in vegetable broth. I MISS cranberry sauce made with walnuts and an orange. It was raw and made in a food processor. Now I gotta go look it up....!

I would have to say it is a vegan redux of my daughter, Sev's, childhood favorite,easy, broccoli souffle. We just put our heads together~got rid of all the nasty stuff~and came up with a BETTER recipe! Maybe it sounds weird... but Vegenaise! Think about it -- it's crazy useful! Love me some mashed taters but even better is the brussel sprouts. Sliced in half sauted in olive oil til tender but not at all mushy sprinke with some umeboshi vinegar! It sets off all of the heavy carbs (which I love) and is just mighty tasty.

I love raw cranberry sauce!! It is made by blending cranberries, water, apple, orange, orange zest, cinnamon, and a little vanilla. Awesome! Can't live without it.

Such a simple staple, yet still my all-time fave: homemade mashed potatoes made with Silk soymilk... my mother-in-law makes a big pot especially for me every year! :)
