We're fortunate to have two fabulous vegetarian Indian restaurants not too far away. I'd eat every meal at either place if I could. It's impossible to pick a favorite from such a varied and spectacular cuisine, but I'll go for sambar.

I am trying to learn more about Indian food because I really love it! I've been eating some vegan Amy's frozen Indian meals which have been really good. I recently went to a new vegetarian Indian restaurant in Nashua, NH, and everything was delish. I was surprised by how good the dessert was- a sweet shredded carrot dish. It was almost like pudding. Even my carnivore husband enjoyed it.

Having lived in an ashram for 20 years, I learned to cook Northern style Indian cooking from the best! One of my favorite dishes is parantha which is basically whole wheat dough stuffed with a spicy filling and pan fried. Most of the time you'll find aloo parantha (potato stuffing) in restaurants, but I love them stuffed with spiced cauliflower (aloo gobi) or sweet potatoes. These are fantastic for breakfast, brunch, lunch, dinner, snacks -- whenever! Served with chutney or even vegan cream cheese.

OH MY GOSH! What a cool giveaway. My favorite Indian dish is probably dahl. It's so simple, but my life would be so much less wonderful without dahl. Delicious, hearty and nutritious. Last time I was in India I had this AMAZING spinach dahl which I have never stopped dreaming of. When I go back next year, I'm gonna try to get the recipe from the people at the restaurant! ha!!

I have had the good luck of living with a girl from India, and she often gets me to try her food (which is awesome)! One of the yummiest things she's had me try is aloo gobi sabji (she told me how to spell it - hah)! So yummy and so simple to make. I'd love to try out more indian dishes!

Chana Palak. I learned how to veganize Palak Paneer by substituting Paneer with Chickpeas and using Earth Balance instead of ghee and soy milk instead of cream to make the creamy spinach curry. So delicious! :-)

Anything from an all veg buffet! the best, though, is saag paneer!!! with the tamarind sauce on top! and raita! YUM!!!!

Sound like just what I need to learn how to eat Indian food - right now I'm at Naan - which I love when I can find vegan. I remember visiting an Indian restaurant years ago (before I was vegan) and they had a zillion styles of naan - savory and sweet. To have that feast again, I need to learn how to make it - and expand my Indian palate!

I've loved every Indian dish I've ever tried, but my favorites have to be Malai Kofta, Navrattan Korma, or Baigan Bharta. This has to be my favorite kind of food because it is so easy to make vegan/vegetarian, and lots of it already is. Oooh, and we can't forget about the many kinds of pickle and Naan bread!

Potatoes, peas, and cauliflower with mild curry spices is delightful. I like to add mango or mint chutney to mine with veg-friendly naan. I also had this combination served with warm lentils at an Indian restaurant.

Indian is the perfect cuisine for vegans. One can eat simply without sacrificing flavor. I enjoy making shabnam kari (curry with peas and mushrooms),it's got a kick with cardamom. Dhasanak (lentil puree) is a delicious recipe from India's resident Parsi (Zoroastrian) population. It's lentils mixed with coconut milk, cumin, cardamom, cilantro, mint, and cashews. I also like putting mango chutney on Trader Joe's Vegetable Masala Burger. It's got sass compared to other veggie burgers! Trader Joe's Masala Tandoori Naan is great.
