Vegan Eatery with Ocean Views to Open in Miami

Chef Matthew Kenney will launch 1 Hotel South Beach’s first vegan restaurant this month.

Plant-based culinary guru and restaurateur Matthew Kenney partnered with 1 Hotel in South Beach to open his new casual eatery plnthouse. While 1 Hotel is focused on wellness, plnthouse will be the first fully plant-based restaurant of its six existing eateries. The new restaurant will feature indoor and outdoor seating (complete with ocean views), and the menu will include the One Salad (made with shaved vegetables, hemp seeds, sunflower sprouts, spicy macadamia nuts, and avocado in a chili-lime vinaigrette); a bahn mi sandwich featuring ginger roasted eggplant, lentil pate, smoked jalapeño cream, carrots, radish, herbs, and collards; and desserts options such as the Mango Cheesecake with pistachio crust and lime curd. Beer, wine, and cocktails (made with fresh garnishes, juices, and mixers) will also be available. plnthouse will be located near the hotel’s spa, gym, and pool, which Kenney says “further enforces the idea that plant-based food and a healthy, active lifestyle are entirely intertwined.” To date, Kenney has founded several ventures in Miami, including fine-dining restuarant Plant Food + Wine (another location of which he operates in Los Angeles) and an outpost of The Matthew Kenney Culinary Academy in the Wynwood neighborhood.
