Las Vegas-based restaurant The Pasta Shop Ristorante and Art Gallery will debut an all-vegan menu on July 1. The new 20-item menu features dishes such as the Live Forever Salad (made with mixed wild greens, brown rice, roma tomatoes, red onion, and roasted cashews), Linguini Fra Diavolo, and Cracked Black Pepper Pappardelle served in a rose red sauce. “My son and daughter are both vegan,” the restaurant’s owner Ann Alenik said, “and we have always eaten largely-planted based.” Alenik—who also showcases her art on the walls of the upscale Italian eatery—revealed that The Pasta Shop had a “secret” vegan menu that was wildly popular with customers. “Creating a full vegan menu made sense,” Alenik said, “and we’re excited to offer these new, healthy options.” Alenik partnered with local vegan resource “Vegans, Baby” to host an event on June 26 announcing the new menu launch. “We wanted to have this ‘Vegans, Baby’ event as a way to let the vegan community know we are here and listening.” With the recent opening of the second location of vegan fast food joint VegeWay and many other cruelty-free options around town, it is clear that the vegan scene in Las Vegas is growing—which is why VegNews named Sin City one of its top 10 vegan cities in America.
