
Keep your guests on their toes this Fourth of July with this seemingly cool, refreshing cucumber salad that packs a sneakily spicy punch. Sure to disappear from any picnic table faster than the coveted last sparkler, these cukes will set off fireworks on your tongue. The combination of mint and jalapeño is irresistible in this super-fresh salad that comes together in fewer than five minutes.

Serves 4
What You Need:
3 tablespoons lime juice
2 tablespoons soy sauce
1 tablespoon sugar
1 clove garlic, minced
2 tablespoons mint, roughly chopped
1 teaspoon jalapeño pepper, seeded and minced
2 large cucumbers, peeled, sliced lengthwise, seeded, and thinly sliced
1/4 cup dry-roasted peanuts, chopped

What You Do:
In small bowl, mix lime juice, soy sauce, sugar, garlic, mint, and jalapeño. Add cucumber slices and peanuts, toss gently, and serve.
