
Strawberry season is upon us in full force. There are about 8 bajillion ways to serve these stupendous berries, including, of course, just shoving your face into the strawberry patch and munching away like madness. This shake—from our own sweet vegan Hannah Kaminsky—is a simple twist on the soda-fountain classic—a twist that excludes all the grossness of dairy and refined sugars and really highlights the sweetness of strawberries!

Serves 2
What You Need:
2 cups fresh strawberries, hulled
1 12-ounce package firm silken tofu
1 cup vanilla soymilk
2 tablespoons barley malt syrup
1/4 to 1/3 cup agave syrup

What You Do:
1. In a blender, combine strawberries and tofu
until thoroughly mixed together. Scrape down
the sides of the blender, and process once
more until completely smooth.
2. With the blender running, add soymilk
and barley malt syrup. Add agave to taste,
depending on the strawberries’ sweetness.
