
Whether or not your mother is Irish, she'll love this warm, homey Irish Soda Bread when you serve it still steaming from the oven at her Mothers' Day brunch. With a huge fruit salad, tofu scramble, and tempeh sausage patties, you might not even need the Irish coffee to accompany this bread. But, then again, when do you technically need Irish coffee? So long as your mom's the type to drink before noon, bottoms up!

Makes one loaf
What You Need:
1-1/4 cups soymilk
1 tablespoon white vinegar
1 tablespoon canola oil
3 cups unbleached all-purpose flour
1 teaspoon sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins

What You Do:
1. Preheat oven to 375 degrees. In a medium bowl, combine soymilk, vinegar, and oil and set aside.
2. In a large bowl, combine flour, sugar, baking soda, baking powder, and salt until blended. Stir in raisins. Add soymilk mixture and mix well to make a stiff dough. .
3. Shape dough into a round loaf and place on a lightly oiled baking sheet. Pat the top down slightly, then use a sharp knife to cut an x-shaped slash on top. Bake until golden brown, about 45 minutes, or when a toothpick inserted in the center comes out clean. Cool on a wire rack.
