
Oh, tofu, we love you so. But let's face it, you're not the most flavorful block on the, um, block. This marinade, by VN contributor Patti Breitman, dresses up our cute curd in a mighty tasty mixture of sweet and savory. Orange juice and soy sauce perfectly complement each other, and fresh garlic really pops.

Serves 4
What You Need:
3 tablespoons fresh orange juice
3 tablespoons soy sauce
1 clove garlic, chopped
1/4-inch piece of ginger, grated
1 block firm tofu

What You Do:
1. In a bowl, combine juice, soy sauce, garlic, and ginger.
2. Cut tofu into thin sheets and place in a bowl with the marinade. Let sit for at least 30 minutes, spooning some of the liquid over the tofu a few times.
3. Use the marinated tofu as is, or bake at 350 degrees for 15 minutes. Enjoy in sandwiches, tossed in salads, or over rice.
