Pumpkin Purée

This is a wonderful, fresh base for a variety of pumpkin recipes if you want to steer clear from canned pumpkin.

Makes 1-1/2 cups

What you need:

  • 2 cups pumpkin flesh, cut into 1/2-inch cubes
  • 1 cup water

What you do:

  1. Place the pumpkin cubes and the water in a saucepan with a tight-fitting lid. 
  2. Bring to a boil, then reduce heat to low and simmer, covered, for 20 minutes, or until the cubes are soft. 
  3. Drain well and purée in a food processor until smooth.
