Raw Energy Bars

Chock-full of vitamins, minerals, antioxidants, and essential fatty acids, munching on these raw “candy bars” will give you endless energy.

Makes 16

What you need:

  • 3 tablespoons flax seeds
  • 3 tablespoons filtered water
  • 1/3 cup raw sunflower seeds
  • 1/3 cup raw pumpkin seeds
  • 2 tablespoons hemp seeds
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/3 cup raw walnuts
  • 1/3 cup dried cranberries or cherries
  • 1/3 cup dried figs

What you do:

  1. In a food processor, pulverize the flax seeds for 30 seconds until finely ground. Transfer to a small bowl, add water and set aside for 10 minutes.
  2. Place sunflower seeds, pumpkin seeds, hemp seeds, cinnamon, and cardamom in a food processor and pulverize for 1 to 2 minutes until finely chopped. Transfer 3 tablespoons to a small bowl and set aside for coating.
  3. Add flax mixture, walnuts, cranberries or cherries, and figs to food processor. Pulverize for 1 to 2 minutes or until mixture comes together to form a ball.
  4. Place the seed mixture on a plate. Dampen hands with water, form mixture into 2-inch logs and roll in the seeds.
