Bruschetta with Olives & Walnuts
My daughter Elizabeth loves this quick and simple bruschetta, declaring with conviction, “Olive oil is my friend.” Indulge a little with this healthy oil and savory snack.

What you need:
- 1 cup of bottled green olives, with or without pimientos
- 1 cup walnuts
- 1 cup fresh basil or oregano leaves, loosely packed
- 1 clove garlic, chopped
- 1 tablespoon extra virgin olive oil
What you do:
- Blend all ingredients in food processor fitted with metal blades, until smooth and creamy. Serve on warm slices of a hearty loaf of bread. Enjoy!
