Bruschetta with Olives & Walnuts

My daughter Elizabeth loves this quick and simple bruschetta, declaring with conviction, “Olive oil is my friend.” Indulge a little with this healthy oil and savory snack.

What you need:

  • 1 cup of bottled green olives, with or without pimientos
  • 1 cup walnuts
  • 1 cup fresh basil or oregano leaves, loosely packed
  • 1 clove garlic, chopped
  • 1 tablespoon extra virgin olive oil

What you do:

  1. Blend all ingredients in food processor fitted with metal blades, until smooth and creamy. Serve on warm slices of a hearty loaf of bread. Enjoy!
