What you need:
- 10 to 12 ounces mixed baby greens (mesclun)
- 2 12-ounce jars pickled beets, drained
- 1/2 cup finely chopped walnuts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice or balsamic vinegar
- Salt & pepper to taste
What you do:
- Combine the ingredients in a serving bowl, toss well, and serve.
