Vegan Pecan Truffles
Great for instant energy and to satisfy an afternoon sweet tooth, truffles have become a staple in today’s raw diet. Made from soaked nuts, dried fruit and nut butter, raw truffles are excellent alternatives to the high fat, sugary and calorie-laden sweets available today.

What you need:
2 cups pecans (soaked for 12 hours and drained)
1 cup pitted medjool dates
1 teaspoon cinnamon
1/4 cup raw almond butter
Shredded coconut or chopped nuts (garnish)
What you do:
Blend nuts in food processor until finely chopped. Add remaining ingredients and pulverize until a ball of dough is formed. Form into small balls and roll in coconut or chopped nuts. Keep chilled.
