In a recent interview with Standard UK, top London chef Kim Woodward advised that all restaurants must serve at least one vegan option. Woodward—a past contestant on MasterChef: The Professionals—revealed that throughout her career, she witnessed a substantial increase in the demand for vegan food. “Over the past two years, there are more vegans and vegetarians than I’ve ever seen,” Woodward said. “Right now, it’s like a must-have as an option on the menu.” Having just been appointed executive chef at 100 Wardour Street, Woodward is creating a variety of vegan options to meet these demands. “I’ve created things like cucumber and avocado gazpacho [and] roasted carrot salad with an almond hummus,” Woodward said. She joins acclaimed non-vegan chefs such as Chef James Rigat of Mabel Gray in Detroit and Celebrity Chef Jose Andres in recognizing the importance of vegan option on all restaurant menus.
