Nation’s First Vegan Butcher Shop Opens to Massive Crowds

Herbivorous Butcher—the highly anticipated first-ever vegan butcher shop in America—opened its doors last weekend in Minneapolis, MN to a line around the block. Started by brother and sister Aubry and Kale Walch with funding from a Kickstarter campaign, the shop opened Saturday to a receptive crowd that was eager to sample its vegan versions of deli meats, sausages, porterhouse steak, ribs, and various housemade cheeses. In addition to local television coverage, news of the all-vegan butcher shop was featured across international media outlets such as TIME, Eater, NPR, and French magazine Menly—prior to its grand opening. Additionally, a viral “Now This” video—which feature short videos designed to reveal shocking or interesting phenomena—was created about Herbivorous Butcher. In response to their successful grand opening, Kale said, “It’s humbling, really,” while Aubry exclaimed, “It’s more than we could ever expect or wish for.”
