David Chang—known for his wildly successful New York City restaurant chain Momofuku and on-screen role in the docu-series Mind of Chef—recently sampled a burger made by biotech startup Impossible Foods. Cheng then took to Facebook and stated, “Today I tasted the future and it was vegan: this burger was juicy/bloody and had real texture like beef. But more delicious and way better for the planet.” The Impossible Burger has been generating buzz amongst scientists, activists, environmentalists, chefs, and investors such as Bill Gates, who holds a stake in the company that raised $108 million in its last round of funding. The company plans to begin distribution to select restaurants in San Francisco, New York, and Los Angeles this summer. “I can’t really comprehend its impact quite yet … but I think it might change the whole game,” Chang said.
