Aside from my summer go-to, strawberry shortcake, I've been lapping up iced yerba mate sweetened with agave nectar - refreshing and gives me a healthy boost without the nasty shaky caffeine crash! Coconut Milk Ice Cream with Soy Whip Cream and bananas makes me really happy...and the vegan cake that my boyfriend made me for my birthday, out of nuts, cocoa, fruit, dates, agave nectar..and whatever else the recipe called for! I still have some in my freezer, I don't even want to run out!

My mother would cube up a watermelon, put the cubes on a cookie sheet, and when frozen put them in a bowl for dessert - sort of a granita, but Mom didn't know, it was just a delicious treat.

Summer Pudding. A tradtional English (I think) dessert by mother used to make. Line a pudding basin with bread. Fill with cooked berries and their juice. The juice soaks into the bread making it a beautiful pink/purple color.

I like no-bake desserts, like chocolate tofu pudding pie, or a no-bake fruit pie I recently discovered. Fill a graham cracker crust with fresh fruit. Cook crushed pineapple with a little cornstarch in a pot until it thickens, then pour over the fruit. Chill for a few hours. It's AWESOME.
