According to independent studies conducted by supermarket chains Coop and Dansk Supermarked, sales of products labeled as vegan and vegetarian rose by 25–30 percent in Denmark between 2014 and 2015. Analysts determined that the increased sales come primarily from meat and dairy alternatives such as soy sausages, falafel, plant-based burger patties, and tofu. “Our research suggests that the importance of meat in our meal preparations is undergoing changes,” National Food Institute Senior Analyst Sisse Fagt said. Other countries have recently experienced a similar surge in sales, including Germany, where a recent report revealed that one in 10 new products bares a vegan or vegetarian label.
