Crowd-Pleasing Vegan Cashew & Pepper Dip
This is one my most requested recipes when I entertain. I like to serve it with whole grain crackers, celery sticks, and baby carrots. You can roast the red pepper yourself, or you can buy them in a jar from your local deli.
What You Need:
- 2 cups cashew pieces
- 1 roasted red pepper (or three large pieces from a jar)
- 1/2 cup water
- 1/4 teaspoon sesame oil (optional)
- Salt and pepper to taste
What You Do:
- Place all ingredients in a food processor and process until smooth, scraping down the sides of the bowl frequently.
- Process for 3 minutes to make the dip completely smooth.
