Chocolate Ganache

This deceptively simple chocolate ganache are part of Cupcake Wars winner Doron Petersan's Chocolate Seltzer Cupcake.

Makes 1 cup

What You Need:

1 cup good-quality chocolate
½ cup coconut milk

What You Do:

1. In a double boiler over medium heat, heat coconut milk until steaming. Do not boil. In a separate bowl, pour over the chocolate and let sit for 30 seconds.

2. Whisk coconut milk and chocolate until chocolate is melted and two ingredients are completely combined. Ganache should be thick, but still pourable. Set aside.
