Serves 1
What You Need:
- 1/2 teaspoon + 1 tablespoon non-hydrogenated margarine, softened and divided
3 thick slices tomato - 1 slice red onion
2 slices multi-grain sandwich bread - 1/2 cup Daiya cheese
What You Do:
- Over medium-high flame, heat cast-iron or non-stick griddle. Add 1/2 teaspoon margarine and lay tomato and onion on the surface to cook.
- Spread remaining margarine on outer sides of the bread. Lay the slices of bread side-by-side on the griddle and top each slice with 1/4 cup of Daiya cheese.
- Lay the tomato and onion slices on the open face of one piece of bread. Once cheese begins to melt, combine the two sides, and cook until both sides are lightly browned. Cut the sandwich in half and share with someone special!
