If Jackalope Mobile Kitchen hits its $10,000 goal, Dallas residents could be noshing on vegan gourmet sandwiches by mid-October.

A Texas man has just launched a Kickstarter to fund his dream of opening Jackalope Mobile Kitchen, a vegan food truck. Alexander Salas has already purchased a truck and now seeks $10,000 in donations to buy a vinyl cover, which will display the name and logo of his restaurant-on-wheels. If the goal is reached, it will also fund the purchasing of necessary supplies, licenses, permits, and legal expenses. Jackalope Mobile Kitchen is set to hit the streets of Dallas in mid-October, serving up vegan versions of traditional sandwiches, just in time for the Texas State Veggie Fair.
