Petite Peas and Parsnips

The tantalizing blend of parsnips and peas makes a colorful dish that is both healthful and flavorful.
The slightly sweet taste of parsnips compliments the delicate peas for a subtle but delectable side.
Makes 4 to 6 servings
What You Need:
4 parsnips, peeled and sliced
1 16-ounce bag frozen peas
1 tablespoon vegan margarine, plus more as needed
1/4 teaspoon sea salt
Freshly ground pepper, to taste
What You Do:
- In a steamer, steam parsnips until slightly tender, about 10 minutes. Add frozen peas and continue to steam until peas are hot and parsnips are soft.
- Transfer to a large bowl. Add margarine, sea salt, and pepper. Toss gently until parsnips and peas are evenly coated. Serve warm.
