This easy, delicious cashew cream from VN columnist Gena Hamshaw pairs perfectly with raw corn tortillas and your favorite fillings for simple weeknight tacos.

Serves 4

What You Need:
1 cup cashews, soaked for 2 hours
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 cup water   

What You Do:

  1. In a blender, add cashews, lemon juice, salt, and water and blend until smooth.
