Maple Roasted Butternut Squash

Pairing maple syrup with butternut squash is a match made in side-dish heaven.

Serves 6

What You Need:

1/4 cup maple syrup
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon cinnamon
1 teaspoon dried thyme
1 medium butternut squash, peeled and cubed

What You Do:

  1. Preheat oven to 350 degrees and lightly grease a baking sheet. In a small bowl, combine maple syrup, oil, salt, pepper, cinnamon, and thyme. In a medium bowl, add butternut squash and toss with marinade.
  2. Spread squash on baking sheet in a single layer and roast for 45 minutes until squash is soft and browns around edges. Serve immediately.
